I got married in Bali in March this year.
We used Bali Weddings International (www.baliweddingsinternational.com), could not fault their service. Everything went off without a hitch and it was just how we wanted it (except for a couple of storms after the ceremony).
One peice of of advice though, if you are planning on getting married at sunset on the beach don't forget that the beach is a public space.
While it sounds unbeleivable, it is not uncommon for beach sellers to try and sell things you and your guests during the ceremony or want to come very close and watch.
We got the sunset, beach view and privacy by doing it on private property at a restaurant. You could get the same at one of the beachside hotels.
The sun also sinks quickly in Bali, so in order to get some good photo's before and during the sunset you would want to start no later than 5.00pm.
Good luck, I rekon it is the only way to get married.
