There's a good chance that the music you heard in your hotel was not, in fact, Balinese at all. For many years now around Bali, most hotels and restaurants have been playing tapes of Sunda music (from western Java) almost non-stop. Personally, I love it (and many others do too). It's perhaps unfortunate that many people come away from Bali believing that what they heard was Balinese music.
Balinese music is really unmistakable and nothing at all like Sunda music. I have several Sunda tapes...if you're interested in their titles, please email me and I'll send them to you. Here's one for starters: "SABILULUNGAN" by DEGUNG.
