Sounds like something in Jimbaran Bay such as Pansea which is on the sand you requested. There are not too many hotels along the beach stretch (which is about 2km? long) and they are well spaced. There is a fishing village further along the beach. And all those seafood on the sand warungs. And for a bit of luxury, you can walk down for a sunset dinner at PJs on the beach at the Four Season or at the Intercontinental, not that Pansea does not have its own decent restaurant on the beach. However it is not walking distance to the real shopping although you can walk to the local village on the Jimbaran road and buy some dusty souvenirs - it is a short ride to shopping at Kuta or Nusa Du.
