Peter, the questions you ask could fill a book. And that is why I'll suggest one. Prior to my first trip to Bali I purchased a book called "Fielding's Surfing Indonesia". It was invaluable. Maps, photos, info about what season is good where, tide info, and on and on. My edition covers from the spots around Sumatra, Java (including G-land), Bali (and surrounding area), Lombok (and Gilis), Sumbawa, Sumba, etc.
Book can be purchased online via Amazon, and other book suppliers.
I'm not trying to avoid answering your questions but the book should do 95% of it. Plus you can carry it with you for reference on your trip.
