The big problem with Balinese babysitters and swimming pools is....they can't swim (usually anyway). We did find one marvellous young lass who would get into the childrens' pool with our (then) 3 and a half yr old. Because of modesty she would wear shorts (long ones!) and a Tshirt and would try to stay as dry as possible. Once again I reccommend you try and meet the potential babysitter beforehand and then you can discuss with her if she'll get in the pool. She should be allowed by the hotel management, after all you're the paying guest.
I agree about not taking your children on the beach they could easily get overwhelmed. Another brief tip it may pay to get two babysitters, one for each child also they will help each other.
