First of all, the Ganesha Bookstore in Ubud is famous for its gamelan workshops. You just have to register yourself there for lessons. I think there are three times a week.
For traditional dance lessons, I would be able to help you and book for you lessons with a dance master (who has already travelled to France and whose daughter is famous in Gianyar and surroundings for her talent). His name is Bapak Ketut Dibia and he lives in Tampaksiring (where I reside too).
He and his daughter teach Balinese dances (Legong, Oleg, Duduk gebyar, and so on).
