I would carefully check the size of the hotels of your choice. They're both top class hotels - no doubt (altough I have personal experiences in the Hyatt only), but you might be a bit disappointed of the sheer size of the Hyatt. On the other hand, it has a marvellous garden with all kinds of tropical flowers and fruits - a must see.
But after our stay in Sanur we checked Jimbaran Bay and stayed in none of the big and highly recommended ones but in the rather small PanSea Bali, which is situated right next to the Interconinental and close to the Four Seasons. Only 40 rooms or so, each one with a small private garden, outside shower, small but very good restaurant, great friendly service and beautiful atmosphere (managed by a small french group).
I can really recommend this one.
