We found that $US100 bills were the best rate, but took AUD and NZD as well. Take as new looking cash as possible, ratty money is often not taken by moneychangers, and as big a denominations as possible as the rates are better for bigger notes. $US100 buys an awful lot in Bali, and most hotels have safes or lock-boxes to put extra cash in before you change it. Money changers are available all hours of day and night, so you don't have to change too much at once.
And DO take the advice about moneychangers, count it, check it and don't be distracted by anything or anyone til your rupiah are safely on your person!
