For starters don't worry about comments that you must go to Ubud to stay. You'll be perfectly happy in Sanur. You can get anywhere from there.
The only way to learn how much to pay for things is to practice - read some of the 'just back' reports to see how much they paid for things - this'll give you a good idea.
The White Water Rafting is a wonderful experience and something I love doing every time I go.
Take some Imodium or similar tablets with you - they may come in handy......
