We went much the same way as you did - just go and arrange. be sure to bargain. also, at times the locals give you a Rp and a US$ rate. it may be beneficial at times to pay in Rp. See the conversion rate and decide.
parasailing cost us 10$ a person and water sccoter about 15$ but we managed to pay in Rp which translated into approx 12 US$.
