We stayed at the Sheraton Nusa Indah, it was very nice and service was excellent. However if I went to Bali again I would not stay in Nusa Dua. You really don't get a feel for the "real" Bali. I saw this same comment written many times on the Forum and its hard to put what I mean into words. The staff are trained to provide you with top notch service but not to chat with you about everyday Bali.Its unlikely you would learn as much about Balinese culture,traditions, etc. while staying at any of the hotels in Nusa Dua.
On my next visit I would look for places to stay in Ubud and near Lovina and Singaraja which will bring you in closer touch with everyday Bali
