I'm doing something similar in May - just the other way around, I'm taking my parents to se the wonder of Bali.
I guess that when saying that you want to do your own tours, it means that you want to avoid the organized bus tours and just be the 4 of you - that is the best way to do it !!!
The best way is to hire a driver for a day (plenty of drivers recomended on this forum), that way you can tour at your pace. It also turns out cheaper this way, you can get a driver with aircon car for less than RP200,000 per day.
As what to see and do, where to stay ect - that depends on your expectations & what you expect from the trip (also on how long you are staying.
