Unless you're extra generous and want to give them paper money,change a small amount of money just outside customs ($10-20 is adequate to get you to a hotel an tide you over until you can get to an ATM or money changer the next day) and then tip in rupees - they have difficulty converting coins. You will undoubtably see many Balinese near the airport wanting you to buy Australian coins back from them.
