My fiancee and I were planning to do the same as you - marriage in Bali in July or August. Unless you are willing to spend a fortune and have a five star hotel you are styaing at arrange it for you (e.g., Four Seasons, Ritz, etc. It is simply not worth if you want the most important day of your life to be stress-free. Many people say it was conducted perfectly all arranged via telephone and e-mail but that was not the cas. There is a fellow (name is Jim I believe) at the Ubus Sari Resort who puts out a mailing, but from my experience it is just too unreliable to plan a wedding from overseas unless you have family there.
There is also a ton of paperwork that needs to be completed in advance, you must be of the same religions, and brides can't show their tummies during the ceremony! Unless you can pay someone off, you have to be in Bali 7 days before the ceremony can take place (this is to make more $'s off of tourists I'm sure).
Have your wedding at home, go to gorgeous Bali for your honeymoon stress free and enjoy!
