All of the transfers between airport/hotel and back were extremely clear and well-organized - they put little round colour coded stickers on the travellers to route you to your hotel etc. Be careful to hang on to any vouchers they give you for the return transportation - some of them are quite small in size.
The hotels in Singapore (in our case) were very nice, though modest - probably 2.5 - 3 star. They were clean and safe, and near interesting districts. I would expect the same for HK.
The 5 tours included in our package were also extremely well run - the guides spoke excellent English, we saw the main highlights of Bali in relative comfort, although we didn't get to spend as much time at some of them as we would have liked.
With respect to the currency, the rates that I saw when I was actually THERE were not the same as the rates on the 'net, and there was definitely a big disadvantage to carrying Cdn$ instead of U$. Check out the posting by "Halyna", as she explains the math better than I can. Good luck on your trip.
