I too saw arrogant tourists who never spoke to the Balinese. The worst I saw was a man in a Cidomo in Lombok, on the beach of all places, throwing 500Rp. bills at the kids who were porters. They had first packed a poor horse and cart with three packs and three large men. The balinese friend I was with got very angry, saying he thought the tourists felt like kings and these children would grow up thinking they were destined to be poor peasants. The balinese are wonderful people and if you don't care enough to explore and enjoy the culture as it exists, chose another place to visit!
