I can't imagine that any airline is going to start sending planes around the place on days other than the scheduled ones. For airlines and airports everything is connected to everything else in the biggest way imaginable. If planes start wandering around out of their scheduled times the chaos would be catastrophic.
I've flown with Garuda lots of times and they have always been fine.
My guess is that the travel agent in NZ confused the local times in Indonesia with the local times in NZ and mucked up the itinerary accordingly. I wonder if the whole thing may have been further complicated by the start of daylight saving in NZ somewhere in the middle of it all.
Just a thought.
