I can only speak for the Ananda Cottages in Ubud, having stayed there a few times over the last few years I love them. Pay the extra for the upstairs superior rooms (about $22aud per night) they have no glass in the window just bamboo blinds to draw at night so you get all the fresh air through the room. They are located in the rice fields so you have to walk through them to get to your room (can be tricky late at night you need a torch) The swimming pool is small but looks out over the fields and the restuarant offers some fantastic balinese dishes not on the menus of the normal tourist places. It's an easy walk into town but you might want to grab a ride back as it is ALL uphill. The staff are great, very helpful and friendly. I will certainly go back again.
