We rented a small villa with private pool once and it was very romantic. We sent the household staff away whenever we wanted privacy, but they took care of everything we needed. This was much better than staying at a hotel. We had a look at the Amandari in Ubud and Amankila further in the East, but although quite nice they are still hotels.
If I would have to stay at a hotel, the only choice would be the Four Seasons where every villa has a walled private garden with a plunge pool, a nice sitting/dining pavillion, and a great view over the beach of Jimbaran.
