I've tweaked the spices a little over the years to my taste, and I don't use the orange peel in mine, not do I sprinkle flaked almonds on top.
I have my Oma's speculaasplank to make the traditional windmill shape - it's time consuming, but very impressive, and since it's almost Sinterklaas I'll be making the effort next weekend!
