I'd recommend you do a week on the Gilis and your last 3 nights in Ubud - that way you get the best of both worlds.
I also would choose one island based on what you are after for your holiday - the less you move around the less time you waste checking in & out of accom.
Many Bali regulars prefer Gili T as it has more 'happening' there - aka there are more tourists, it is really quite busy with hundreds of people moving around the main beach areas, going diving, etc. It has the biggest range of accommodation and bars & cafes, which also suits many Bali lovers.

Gili Meno and Gili Air are much quieter. I like Gili Air as it has a nice balance of accommodation, bars and cafes with berugaks on the beach. Gili Meno is also lovely. Both give you a more 'tropical deserted island' type experience. There are other tourists but it is not as busy as Gili T.
